Oat & Banana Pancakes (No Flour, No Sugar)-Part of The Soft Source For Living Series

A simple, healthy breakfast using pantry staples.

Ingredients:

  • 1 ripe banana
  • ½ cup oats
  • 1 egg (or flaxseed egg for vegan option)
  • ¼ cup milk (dairy or plant-based)
  • ½ tsp baking powder (optional)
  • Pinch of cinnamon (optional)

Instructions:

  1. Blend all of the ingredients into a smooth batter.
  2. Heat a non-stick pan and cook small pancakes on a medium heat, flipping once bubbles appear.
  3. Serve with fruit, yogurt, or peanut butter for a filling meal.

Cost-saving tip: Buy oats in bulk—they’re cheaper and can be used for porridge, baking, or even homemade oat milk!
